Poke Bowl

Use sushi grade raw tuna.  Dice it up.  Add lime juice and pink salt and let it marinate/"cook".  Add basmati rice, tomatoes, baby cucumbers, edamame, carrots, avocado, red pepper, and a spicy almond sauce.  Easy, fast food for a healthy weekday meal. 

Ingredients: 

2 sushi grade tuna steaks

1/2 cup Lime Juice 

1 tsp pink salt

5 small cucumbers

1 pint cherry tomatoes

2 cups of edamame

1 red pepper diced 

1 cup shredded carrots

1 large avocado diced

2 cups white Basmati rice

Almond "Yum Yum" sauce:

INGREDIENTS

  • 1 Cup Whole Raw Almonds (5oz)
  • 1½ Cups Water
  • ¼ Cup
  •  Avocado Oil
  • ¼ Cup Lemon Juice
  • 3 Tablespoons Vinegar
  • 2 Tablespoons Tamari or Bragg Liquid Amimos
  • 1 Tablespoon Tomato Paste
  • 3 Tablespoons Nutritional Yeast
  • 2 Whole Garlic Cloves
  • 2 Teaspoons Crushed Chipotle Peppers
  • 2 Teaspoons Smoked Paprika
  • 2 Teaspoons Kosher Salt or Coarse Sea Salt
  • ½ Teaspoon Onion Powder
  • ½ Teaspoon Ground Cumin
  • Pinch of Cayenne Pepper

Blend it all together for 5 minutes until thick and smooth.  Can add more water for thinner consistency.  Or just grab Bitchin' Chipotle Sauce from a store near you.
