Vegan Paleo Blondies

Ingredients

  • 8 Tablespoons chia seeds 

  • 1.5 cups cold water 

  • 6 cups Ground Almond butter

  • 2 cups sun butter

  • 4 cups coconut sugar

  • 2 Tablespoon vanilla extract

  • 4 Teaspoons baking soda

  • 2 teaspoon Kosher Salt

  • 2.5 cups dairy free chocolate chips


Instructions

Preheat oven to 325F and line ½ sheet pan with ceramic baking liner. 

In the Vitamix, blend chia seeds and water until gel-like texture starts to form.  Transfer to a large bowl.  Add almond butter, coconut sugar, vanilla extract, baking soda, and salt. Fold mixture until a thick batter is created. Add chocolate chips and fold in. Transfer batter to largest sheet pan with parchment and use a rubber spatula or hands to spread out evenly. 

Bake until top is lightly golden, about 12-15 minutes. Set Timer at 12:00 minutes and add time if needed. Let cool for 30-45 minutes before cutting.
