FAST & EASY GF Biscuits

gluten free biscuits

2 cups gluten free flour  (Cup 4 Cup GF Flour is great, but it has dairy. Better Batter DF/GF works well too. I like to play around with what I have on hand first.)

1tsp salt

1/2 tsp cream of tartar

1 egg

1 1/3 cup coconut cream

Preheat to 450 degrees.  

First, combine dry ingredients well.  Mix egg and cream together.  Add cream mix to dry ingredients.  The mixture is quite sticky.  Using a baking mat or parchment, add a light layer of flour.  Using a 2 TBS ice cream scoop, drop a layer and then top it with another.  Using flour, press it into an inch or so thickness and round it into the shape of a biscuit.  Using the cream left in the measuring cup, brush the tops of the biscuits.  Bake for 8-12 minutes depending on your oven.  9 minutes works well for mine.  I like mine with ghee and honey or strawberry preserves!
